Bread baking – quick and easy?

So I’ve made homebaked yeast breads a few times. With pretty good results, actually. But recently I heard about this recipe:

The idea of easy bread that requires no kneading… I had to try it. So about a month ago I did make it. It LOOKED great:

So recently someone on Twitter mentioned they were making the same recipe. I asked her how she liked it. She said it was OK. Definitely better with salted butter, she said.

Here was my review that I posted on Ravelry.com forums:

I have to say this was phenomenally easy and fun bread to make. In addition to the different yeast (mentioned above) I also used regular flour instead of bread flour but threw in about a tbsp of gluten.

Unfortunately, the texture doesn’t wow me. The dough was kind of heavy, moist, spongy. Thick. I wonder if I should have left it in the oven another 5 or 10 minutes? Not sure.

But even though it was quick and easy to make, I’m not inspired to make this recipe again, since I wasn’t really impressed by the end result (eating-wise). Shame. It looked purty. And it was the first time I’ve used the cast iron dutch oven I inherited from my mom-in-law.

Anyhow, this @onesweeterlife asked if I’d heard of the book Artisan Bread in Five Minutes a Day, which I had not. But it certainly looks intriguing. You make the dough up and then keep it in the fridge or something so you can pull out and make quick when you want to. Appealing idea.
