Roasted Garbanzo Beans

So someone I’m following on Twitter recently posted that she was making roasted garbanzo beans for a snack. I remember trying that a couple of years ago when I was more active on MyFoodDiary.com. She shared a link to the recipe she is following… here it is:

These are delicious little devils!!  I had askedMichelle for complex carb ideas that did not involve a grain or something that will spike my sugar.  She says “Try roasted garbanzo beans.”

So here they are.  My first attempt and wow!

Take one can garbanzo beans/chick peas, drain-rinse-dry.

Toss them into a bowl with

1/2 tsp sea salt, 1/2 tsp garlic powder, 1/2 tsp onion powder….mix it all up!

Put them on a cookie sheet lightly sprayed with Pam and roast for about 10min at 400 degrees.  Longer if you want them crispier.

Seems to me that I remember adding a drizzle of olive oil to mine and tossing with seasonings more like cumin or paprika or…? chili pepper?  Don’t recall exactly. Wasn’t “wowed” by them when I tried them before. Maybe I needed to roast them longer/hotter. Will try them again…
