Roasted Garbanzo Beans

So someone I’m following on Twitter recently posted that she was making roasted garbanzo beans for a snack. I remember trying that a couple of years ago when I was more active on MyFoodDiary.com. She shared a link to the recipe she is following… here it is:

Recipe says:

These are delicious little devils!!  I had askedMichelle for complex carb ideas that did not involve a grain or something that will spike my sugar.  She says “Try roasted garbanzo beans.”

So here they are.  My first attempt and wow!

Take one can garbanzo beans/chick peas, drain-rinse-dry.

Toss them into a bowl with

1/2 tsp sea salt, 1/2 tsp garlic powder, 1/2 tsp onion powder….mix it all up!

Put them on a cookie sheet lightly sprayed with Pam and roast for about 10min at 400 degrees.  Longer if you want them crispier.

Seems to me that I remember adding a drizzle of olive oil to mine and tossing with seasonings more like cumin or paprika or…? chili pepper?  Don’t recall exactly. Wasn’t “wowed” by them when I tried them before. Maybe I needed to roast them longer/hotter. Will try them again…

So on Twitter, one of the people I’m following is a runner who mentions what he’s preparing to eat from time to time. He makes lots of things that sound yummy and interesting to me. He makes hummus a lot and things with pitas, like pita chips or pita wedges.

Crockpot Apricot Chicken

OK, so my friend Susie recently posted on Facebook that she was making Crockpot Apricot Chicken. And she posted a pic on FB. Here it is:

So, I asked for the recipe, and finally tonight I’m going to try it (a couple weeks after she shared). I have lots of broccoli in the fridge, so that’s what we’re getting tonight instead of bok choy. Hmm. I also have some cabbage and bell peppers (red and green). I suppose I could make some kind of veggie combo. We’ll see…

Recipe, as told by Susie:

I was supposedly following a recipe online, but it ended up being quite different, since I was limited in ingredients. But this is my recipe: 

Two pieces boneless breast of chicken, 3/4 cups of apricot jam, 1/4 cup of soy sauce, a dollup of peanut butter, a handful of sliced garlic, 1 med. sliced onion, tbsp of sesame oil. 

Add the garlic, onion. 
Add the chicken on top
Mix the soy sauce, peanut butter, sesame oil, and jam together.
Pour and spread on top of the rest of the ingredients. 

You can cook on high for 4 hours or low for 8 hours. I am doing the latter. 

It smells really, really good! I can’t wait for dinnertime!

So, I have chicken thighs first of all, not breast. I’ll probably have to fudge up the recipe a bit, because I think I have more chicken than she did. Maybe a cup of preserves, 1/3 cup soy sauce. I’ve got a couple hours until I have to get it in the pot…

Bacon Salt – Vegetarian, Kosher seasoning

So I’m learning about lots of new things on Twitter. Here’s the latest new-food-thing I tried as a result…

Bacon Salt

I bought it this afternoon at my local Albertson’s. Ralphs supposedly carries it too.

I tried it this afternoon on a fried egg sandwich with cheese. Tasty. Certainly better than those fakey Bac-O-Bits. Later I sprinkled a tiny bit in my hand and wet my finger, dabbed at it and licked it off. It has a somewhat hickory-smoke kind of flavor. If I were to buy hicorky-smoke-bacon-flavored potato chips, I would think this is what the flavoring sprinkled on the chips would taste like. (I have the Original Bacon Salt…Albertson’s also had a Peppered flavor, and there are other ones mentioned on the website linked above.)

Their motto is: “Everything should taste like bacon.”

So someone I follow on Twitter, @bicoastalite, tweeted last night that she was making arepas for a midnight snack. With cheese. She even posted some pics.

Well, I like things made out of flour or corn or corn and flour. Fried is good. Cheese is good. Definitely going to have to try these some time.
